JANUARY

Mike's Sticky Wings

5 pounds chicken wings
1 cup white sugar
1 cup brown sugar
1/2 cup soy sauce
1/2 cup teriyaki sauce
1/4 cup Kahlua
Marinade all ingredients overnight
Bake at 425 degrees for one hour

 

FEBRUARY

Mindy's Cheesy Twice Baked Potatoes

Large baking potatoes
8 slices bacon
1 8oz sour cream  
4 tablespoons butter
1/2 teaspoon salt 
1/2 teaspoon pepper 
1 8oz bag of Extra Sharp Cheddar cheese 
Green onions, sliced

Bake potatoes in preheated oven for 1 hour. Cook bacon.  Crumble and set aside.
When potatoes are done allow them to cool for 10 minutes. Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins. To the potato flesh add sour cream, butter, salt, pepper and cheddar cheese. Mix until well blended and creamy. Spoon the mixture into the potato skins. Top each with more cheese, green onions and bacon.  Bake for another 15 minutes.

 

MARCH

Mike's Yummy Easter Cake

4 tablespoons unsalted butter
4 cups confectioners sugar
1/4 tsp vanilla extract
6 ounces cream cheese

Make one chocolate cake using a cake mix - bake as directed.
Icing:  for this cake I doubled my icing so it is thick on top to hold eggs.
When cake is completely cooled, put white icing on it.
Take 24 multi colors bunny peeps and put on outside of cake following around entire circle of cake. Top cake with either M&M's or candy coated chocolate eggs. 

 

APRIL

Mindy's Bacon-Cheddar Burgers with Caramelized Onions

For Caramelized Onions:
3 tablespoons extra-virgin olive oil
2 large red onions - sliced 
Salt and freshly ground black pepper
*Cook it all in a skillet until tender.

For Burgers:
Sliced bacon (cook until crispy)
Mix Ground beef, 1 tablespoon Worcestershire sauce and Salt & pepper
Thick slices extra-sharp Cheddar

Grill burgers then assemble burgers with buns and accompaniments, topping with bacon, cheese and caramelized onions. Broil for 2 minutes until cheese & bacon melt together. So juicy!

 

MAY

Mike's Summer Taco Salad

1 pound of ground beef (cooked)
Add 1/2 pkg of taco seasoning to ground beef
Layer:
Corn tortilla chips
Grated sharp cheddar cheese
Heat together in oven until cheese begins to melt - remove from oven
Add the cooked ground beef to form layer
Add you choice of the following:
1 chopped jalapeño
1 cup salsa
1/4 cup chopped green onion
1/4 cup sliced black olives
1 small can green chilies
Another layer of shredded cheddar cheese
Top with sour cream and/or guacamole.  Enjoy!

 

JUNE

Mindy's Italian Sausage Stromboli

 

1 pound pizza dough, cut in half
3/4 cup favorite marinara
3 links Italian sausage, casings removed
1 medium green bell pepper, diced
 8oz mozzarella cheese

Preheat oven to 375.
Brown the sausages in a large skillet, until cooked through, 6 minutes. Then add peppers & onions until cooked. On a lightly floured work surface, roll out each ball of dough until it looks like a 10 to 12-inch pizza. Spoon the marinara over crust. Sprinkle the sausage mixture over sauce and add cheese.

Lightly brush the edges with olive oil. Carefully roll up the pizza, forming a Stromboli. Bake for about 25 minutes, or until dough has browned on top and is cooked through. Slice and serve with extra sauce on the side for DIPPING!

 

JULY

Mike's Creamy Dill Cucumber Salad

2 cucumbers thinly sliced
1 teaspoon salt
1 and 1/2 cups sour cream
1/4 cup thinly sliced red onion
1/4 cup fresh dill - minced
2 tablespoons white wine vinegar
2 cloves minced garlic
1 teaspoon sugar
1 teaspoon pepper

Place cucumbers in a colander.  Sprinkle with salt and toss.  Let stand 15 minutes and stir squeeze and blot dry with paper towels. In a large bowl add all other ingredients and mix well.  Stir in cucumbers. Refrigerate and cover. Store in refrigerator at least an hour. Great salad for the summer!

 

AUGUST

Mindy's Lobster Tails

Melted butter
Dash of Paprika
Dash of Garlic Powder
Dash of White Pepper
Splash of Lemon Juice
 
Grab your kitchen shears. Begin the cut with the bottom blade right under the shell. Only cut the shell and not the meat. Proceed the cut down the center all the way to the base of the tale. Cut to base of tail.
Grab each side of the shell and gently pry away the shell away from the meat.
Once the meat is freed, grab the meat, squeeze the shell together to close the gap and lay the meat on top of the shell.
Prepare lobster marinade of melted butter, a dash of paprika, a dash of garlic powder, a squirt of lemon juice and a dash of white pepper. Drizzle lobster tail with marinade.
Move the lobster tails to a pan and broil. Baste tail with marinade half way through cooking.
Remove tails from pan, dunk in butter and enjoy!

 

SEPTEMBER

Mike's Pumpkin Bundt Cake

2 1/2 cups of sugar
1 cup canola oil
3 eggs
3 cups all purpose flour
2 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1/4 teaspoon ground cloves
1 can of pumpkin (15 ounce)

Preheat oven at 350 degrees
In a large bowl combine sugar and oil until blended.  Add eggs, one at a time.
Combine flour, cinnamon, nutmeg and cloves together.  Add to egg mixture alternating with the pumpkin.  Beat well after each addition. 
Transfer to 10 inch fluted Bundt pan (sprayed with pan spray).  Bake for 60 minutes. Cool for 10 minutes before inverting onto wire rack.  Cool and dust with confectioners sugar.  Enjoy!
